Imagine a restaurant at peak dinner service. Every table is full and everything looks set for a smooth evening, right up to the point when orders start flying in. Then the cracks start to show.
Table 6 over there is still waiting for menus because no one realised they’d been seated.
Table 9 has been served their starter twice, one of them was Table 12’s starter, but they’re still waiting for the drinks they ordered 20 minutes ago.
Meanwhile a waiter is bouncing aimlessly between tables shouting, "Who ordered the salmon?" Spoiler alert. No-one ordered salmon, but the vegetarians on table 11 are about to be confronted with a steak.
It’s chaos, but it’s not the waiters’ fault.
The problem is in the kitchen where they’re running around like headless chickens pumping out meals. With no system in place, plates are piling up at The Pass, everyone’s waiting for instructions, but the Head Chef has lost track of what’s next. No-one is sure if he’s going to explode or cry and no-one is getting fed.
